Ingredients

  • 0.75 cup All-purpose flour
  • 0.25 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 4 Large eggs
  • 0.67 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Butter (melted)
  • 1 cup Heavy cream
  • 2 tablespoons Powdered sugar
  • 8 ounces Semi-sweet chocolate (chopped)
  • None Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 10x15-inch jelly roll pan with parchment paper and lightly grease it.

Step 2

Sift together the flour, cocoa powder, baking powder, and salt in a medium bowl. Set aside.

Step 3

In a large bowl, beat the eggs on high speed using a hand or stand mixer until pale and thick, approximately 3 minutes.

Step 4

Gradually add the granulated sugar and continue to beat until fully incorporated. Add the vanilla extract and melted butter, mixing until smooth.

Step 5

Gently fold the dry ingredients into the wet ingredients with a spatula until just combined. Be careful not to overmix, as the batter should remain light and airy.

Step 6

Pour the batter into the prepared pan, spreading it evenly to the edges. Bake for 8-10 minutes or until the cake springs back when lightly touched.

Step 7

While the cake bakes, lay a clean kitchen towel on a flat surface and generously sprinkle it with powdered sugar.

Step 8

Immediately after baking, invert the cake onto the sugared towel and carefully peel off the parchment paper. Starting from the short end, roll the cake and towel together into a tight spiral. Let it cool completely.

Step 9

To prepare the filling, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour over the chopped chocolate in a heatproof bowl. Let it sit for 1-2 minutes, then whisk until smooth. Allow the chocolate ganache to cool until thickened but still spreadable.

Step 10

Carefully unroll the cooled cake and spread the chocolate filling evenly over the surface. Roll the cake back up tightly (without the towel) and place it seam-side down on a serving platter.

Step 11

Chill the jelly roll in the refrigerator for at least 1 hour to set the filling.

Step 12

Before serving, dust the top of the roll with powdered sugar. Slice and serve to enjoy your Decadent Chocolate Jelly Roll!
