  • 12 pieces Small Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Crème fraîche
  • 2 tablespoons Chives, finely chopped
  • 2 ounces Caviar (choose your preferred variety)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Wash and dry the Yukon Gold potatoes. Slice off the tops and bottoms so the potatoes can stand upright. Then, carefully hollow out the center of each potato using a melon baller or small spoon, leaving a sturdy 'cup' shape.

Brush the potato cups, inside and out, with olive oil. Sprinkle them evenly with salt and black pepper.
