Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 2 large Eggs
  • 2 tablespoons Unsalted butter (melted)
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 3 Bananas (ripe, sliced)
  • 2 tablespoons Unsalted butter (for banana filling)
  • 3 tablespoons Brown sugar
  • 0.5 teaspoons Ground cinnamon
  • 1 cup Whipped cream (optional)
  • 1 tablespoon Powdered sugar (for garnish, optional)
  • 0.25 cup Maple syrup or caramel sauce (optional)

Directions

Step 1

In a medium bowl, whisk together the flour, milk, eggs, melted butter, granulated sugar, vanilla extract, and salt until smooth and free of lumps. Let the batter rest for 10-15 minutes.

Step 2

Heat a nonstick skillet or crepe pan over medium heat. Lightly grease the pan with butter or cooking spray.

Step 3

Pour 1/4 cup of batter into the pan, swirling it around to coat the surface evenly. Cook for 1-2 minutes until the edges begin to lift and the bottom is lightly golden. Flip the crepe and cook for another 30 seconds to 1 minute until set. Repeat with the remaining batter, stacking the crepes on a plate and covering them with a clean towel to keep warm.

Step 4

In a separate skillet, melt the butter for the banana filling over medium heat. Stir in the brown sugar and ground cinnamon until the mixture begins to bubble.

Step 5

Add the banana slices to the skillet, gently tossing them to coat in the caramel sauce. Cook for 2-3 minutes until the bananas are softened and caramelized. Remove from heat.

Step 6

To assemble the crepes, place a few spoonfuls of the caramelized banana filling in the center of each crepe. Fold the crepe into quarters or roll it up to enclose the filling.

Step 7

Serve the crepes warm, topped with whipped cream, a dusting of powdered sugar, and a drizzle of maple syrup or caramel sauce, if desired.
