Ingredients

  • 150 g unsalted butter
  • 100 g granulated sugar
  • 30 g unsweetened cocoa powder
  • 200 ml sweetened condensed milk
  • 200 g crushed plain digestive biscuits (or graham crackers)
  • 50 g shredded coconut (optional)
  • 200 g dark chocolate
  • 50 ml heavy cream

Directions

Step 1

Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

Step 2

In a medium saucepan over low heat, melt the butter. Once melted, stir in the granulated sugar and cocoa powder until smooth and well combined.

Step 3

Add the sweetened condensed milk to the saucepan and stir thoroughly. Cook for 2-3 minutes, ensuring the mixture is homogeneous and glossy. Remove from heat.

Step 4

In a large mixing bowl, combine the crushed digestive biscuits and shredded coconut (if using). Pour the warm chocolate mixture over the biscuit crumbs and quickly mix until everything is evenly coated.

Step 5

Transfer the mixture into the prepared baking pan. Use the back of a spoon or a spatula to press it down firmly and evenly into the pan. Refrigerate for at least 1 hour, or until set.

Step 6

To prepare the chocolate topping, place the dark chocolate and heavy cream in a heatproof bowl. Microwave in 20-second intervals, stirring between each, until the chocolate is melted and smooth. Alternatively, use a double boiler to melt them.

Step 7

Pour the melted chocolate mixture over the chilled biscuit base and spread it evenly with a spatula. Return the pan to the refrigerator and chill for another 2 hours, or until the topping is completely set.

Step 8

Once set, use the parchment paper overhang to lift the slice out of the pan. Place it on a cutting board and use a sharp knife to cut into 12 equal squares or slices. Serve chilled or at room temperature.

Step 9

Store any leftovers in an airtight container in the refrigerator for up to 1 week.
