Ingredients

  • 16 ounces elbow macaroni
  • 4 tablespoons unsalted butter
  • 12 ounces evaporated milk
  • 2 cups whole milk
  • 4 ounces cream cheese
  • 3 cups shredded sharp cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder

Directions

Step 1

Cook the elbow macaroni in a large pot of salted boiling water for 6 minutes. The pasta should be slightly undercooked. Drain and set aside.

Step 2

Grease the inside of your crock pot with butter or non-stick spray to prevent sticking.

Step 3

In the crock pot, add the evaporated milk, whole milk, butter, and cream cheese (cut into small cubes). Stir to combine.

Step 4

Add the shredded cheddar cheese, mozzarella cheese, Parmesan cheese, Dijon mustard, paprika, salt, black pepper, and garlic powder to the crock pot. Mix well until evenly distributed.

Step 5

Gently fold in the cooked macaroni, ensuring the pasta is fully coated in the cheese mixture.

Step 6

Cover the crock pot with its lid and cook on LOW for 2 hours, stirring occasionally to prevent clumping and ensure even cooking.

Step 7

Check the macaroni and cheese at the 2-hour mark. Stir one final time, and taste to adjust seasoning as needed.

Step 8

Once the mac and cheese is creamy and all the cheese has melted, it’s ready to serve. Keep the crock pot on the WARM setting if serving over time.
