Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese
  • 4 strips Cooked bacon, crumbled
  • 0.5 cup Sour cream
  • 2 tablespoons Green onions, thinly sliced
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean, then pierce each one a few times with a fork to allow steam to escape.

Step 3

Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are tender when pierced with a fork. Let them cool for 10 minutes.

Step 4

Slice each potato in half lengthwise. Using a spoon, carefully scoop out most of the potato flesh, leaving about 1/4 inch of potato around the edges. Reserve the scooped-out flesh for another use, such as mashed potatoes.

Step 5

Brush the potato shells inside and out with olive oil, then sprinkle them with kosher salt, black pepper, and garlic powder.

Place the potato halves on a baking sheet, cut side down, and bake for 10 minutes at 400°F (200°C). This will help crisp up the skins.
