Ingredients

  • 0.75 cup unsalted butter
  • 1 cup granulated sugar
  • 0.25 cup molasses
  • 1 unit large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 0.33 cup granulated sugar (for rolling cookies)

Directions

Step 1

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 2

Add the molasses and egg to the butter mixture and beat until well combined.

Step 3

In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. The dough will be soft.

Step 5

Cover the mixing bowl with plastic wrap and chill the dough in the refrigerator for at least 1 hour, or until firm.

Step 6

Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

Step 7

Scoop tablespoon-sized portions of the chilled dough and roll them into balls with your hands.

Step 8

Roll each dough ball in the additional granulated sugar until fully coated.

Step 9

Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 10

Bake in the preheated oven for 8-10 minutes, or until the edges are set and the cookies appear crackled on top.

Step 11

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 12

Store the cookies in an airtight container at room temperature for up to 1 week.
