Ingredients

  • 14 oz cranberry sauce
  • 3 oz gelatin mix (cherry or raspberry flavor)
  • 1 cup boiling water
  • 1 cup cold water
  • 8 oz crushed pineapple (canned, drained)
  • 0.5 cup chopped pecans or walnuts
  • 1 tsp orange zest

Directions

Step 1

In a large heatproof mixing bowl, dissolve the gelatin mix in 1 cup of boiling water. Stir thoroughly until completely dissolved, about 2 minutes.

Step 2

Add 1 cup of cold water to the gelatin mixture and stir to combine.

Step 3

Stir in the cranberry sauce until well mixed and the sauce is broken up into small pieces.

Step 4

Fold in the drained crushed pineapple, chopped pecans or walnuts, and orange zest. Mix gently to evenly distribute the ingredients.

Step 5

Pour the mixture into a gelatin mold or a decorative serving dish.

Step 6

Refrigerate for at least 4 hours, or until the gelatin is fully set and firm.

Step 7

To serve, unmold the gelatin onto a serving platter by running a thin knife around the edges and dipping the mold briefly in warm water before inverting it onto the platter. Serve chilled and enjoy!
