Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with olive oil.
Heat a large skillet over medium heat. Add the Italian sausage and cook, breaking it apart with a wooden spoon, until browned, about 5-7 minutes. Remove excess grease if necessary.
Add the diced onion to the skillet and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant.
Pour the marinara sauce into the skillet, stirring to combine with the sausage mixture. Simmer for 5 minutes, then remove from heat.
While the sauce simmers, cook the egg noodles according to package instructions until al dente. Drain and set aside.
In a medium mixing bowl, combine ricotta cheese, 1 cup of the shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, chopped parsley, salt, and black pepper.
Spread half of the cooked noodles in an even layer on the bottom of the prepared casserole dish. Top with half of the sausage and marinara mixture, spreading evenly. Add half of the ricotta cheese mixture in dollops and spread gently.
Repeat the layers: remaining noodles, sausage marinara mixture, and ricotta mixture.
Sprinkle the remaining 1 cup of mozzarella cheese and 1/2 cup of Parmesan cheese evenly over the top.
Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Let the casserole rest for 5-10 minutes before serving. Garnish with extra parsley if desired.
