Ingredients

  • 2 pieces pork tenderloin
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh rosemary
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Trim any silver skin or excess fat from the pork tenderloins, then slice each tenderloin into 1-inch-thick medallions.

Step 2

Season the medallions with salt and black pepper on both sides.

Step 3

Heat a large skillet over medium-high heat and add the olive oil. Once hot, add the pork medallions to the skillet in a single layer without overcrowding. Sear for 2-3 minutes per side until golden brown. Work in batches if necessary.

Step 4

Remove the medallions from the skillet and tent with foil to keep warm.

Step 5

Reduce the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and cook for 30 seconds until fragrant.

Step 6

Add the soy sauce, honey, Dijon mustard, and balsamic vinegar to the skillet. Stir well to combine and bring the mixture to a simmer.

Step 7

Return the pork medallions to the skillet and spoon the glaze over each piece. Cook for an additional 3-4 minutes, flipping halfway, until the pork reaches an internal temperature of 145°F (63°C).

Step 8

Sprinkle the medallions with freshly chopped rosemary before serving.

Step 9

Serve immediately with your choice of sides, such as roasted vegetables, mashed potatoes, or a crisp green salad.
