  • 6 pieces boneless, skinless chicken thighs
  • 1 cups uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 cups cream of mushroom soup
  • 1 medium, finely diced onion
  • 3 minced garlic cloves
  • 4 strips, chopped bacon
  • 1 teaspoons paprika
  • 1 teaspoons dried thyme
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 cups shredded cheddar cheese
  • 2 tablespoons, chopped (optional for garnish) parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a heavy skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered bacon fat in the pan.

Season the chicken thighs with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of paprika. Add the chicken thighs to the skillet with the bacon fat, searing for 2-3 minutes per side until golden brown. Remove the chicken and set aside (the chicken will finish cooking in the oven).

In the same skillet, add olive oil if needed and sauté the diced onion and minced garlic until fragrant and softened, about 3 minutes.

Carefully remove the foil, sprinkle the shredded cheddar cheese and crispy bacon over the top, and return to the oven to bake, uncovered, for an additional 10 minutes or until the cheese is melted and bubbly.

Step 10

Remove the dish from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving if desired.
