Ingredients

  • 200 grams unsalted butter
  • 400 grams dark chocolate (70% cocoa or higher)
  • 250 grams granulated sugar
  • 6 large eggs
  • 150 grams all-purpose flour
  • 500 ml heavy cream
  • 100 grams powdered sugar
  • 50 grams cocoa powder (unsweetened)
  • 300 grams dark chocolate chips
  • 100 ml espresso or strong coffee (optional)
  • 2 teaspoons vanilla extract
  • 1 pinch sea salt
  • 2 tablespoons golden syrup or light corn syrup

Directions

Step 1

Preheat the oven to 175°C (350°F). Line a 9x13-inch baking pan with parchment paper.

Step 2

Melt 200 grams of butter and 200 grams of dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and allow to cool slightly.

Step 3

In a separate large bowl, whisk together 4 eggs and 150 grams of granulated sugar until pale and thick. Gradually mix in the cooled chocolate mixture.

Step 4

Sift in the all-purpose flour and cocoa powder, and gently fold until just combined.

Step 5

Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a skewer inserted into the center comes out with a few moist crumbs. Let cool to room temperature, then slice into small squares.

Step 6

To prepare the chocolate ganache, heat 200 ml of heavy cream in a saucepan until steaming (do not boil). Pour over 200 grams of dark chocolate chips and whisk until smooth. Set aside to cool.

Step 7

For the mousse layer, melt 200 grams of dark chocolate over a double boiler. Allow to cool slightly while you whip 300 ml of heavy cream and 100 grams of powdered sugar in a large bowl until soft peaks form.

Step 8

Gently fold the melted chocolate into the whipped cream mixture until fully incorporated. Chill for at least 15 minutes.

Step 9

Prepare the glaze by combining 100 grams of dark chocolate chips, 2 tablespoons of golden syrup, and 50 ml of heavy cream in a saucepan over low heat. Stir until glossy and smooth.

Step 10

Assemble the dessert by layering the brownies, chocolate mousse, and ganache in a trifle dish or serving glasses. Repeat to create multiple layers.

Step 11

Top with the chocolate glaze and a dusting of cocoa powder. Optionally, garnish with chocolate shavings or a pinch of sea salt for added texture.

Step 12

Chill the completed dessert for at least 2 hours before serving to allow the layers to set.
