Ingredients

  • 280 grams Gruyère cheese, shredded
  • 280 grams Emmental cheese, shredded
  • 240 ml Dry white wine
  • 1 clove Garlic clove, halved
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 0.25 teaspoons Nutmeg, freshly grated
  • 0.25 teaspoons Black pepper, freshly ground
  • 1 tablespoon Kirsch (cherry brandy, optional)
  • 1 plate Cubed bread, vegetables, or fruits for dipping

Directions

Step 1

In a medium bowl, toss the shredded Gruyère and Emmental cheeses together with the cornstarch to ensure it's evenly coated. Set aside.

Step 2

Rub the inside of a fondue pot or a heavy-bottomed saucepan with the cut sides of the garlic clove, then discard the garlic.

Step 3

Pour the white wine into the pot and place it over medium heat. Bring the wine to a gentle simmer, but do not boil.

Gradually add the shredded cheese mixture to the simmering wine, one handful at a time. Stir continuously in a figure-eight motion with a wooden spoon until the cheese is completely melted before adding more.
