Ingredients

  • 250 grams penne pasta
  • 200 grams cherry tomatoes
  • 1 medium cucumber

  • 75 grams black olives
  • 100 grams feta cheese
  • 20 grams fresh parsley
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente, then drain and rinse under cold water to cool. Set aside.

Step 2

While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, red bell pepper, and red onion into bite-sized pieces. Slice the black olives and roughly chop the fresh parsley.
