Ingredients

  • 6 large ripe tomatoes (fresh or canned)
  • 1 medium yellow onion, finely chopped
  • 3 pieces garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup water or chicken stock
  • 2 teaspoons cornstarch
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Directions

Step 1

If using fresh tomatoes, blanch them by cutting a small X on the bottom of each tomato and boiling for 30 seconds. Transfer tomatoes to an ice water bath, then peel and chop into chunks. If using canned tomatoes, drain them and chop into chunks.

Step 2

In a medium saucepan, melt the butter over medium heat. Add the chopped onion and garlic. Sauté for 5 minutes, stirring occasionally, until softened and fragrant.

Step 3

Add the chopped tomatoes to the pot, followed by the brown sugar, apple cider vinegar, dried basil, dried oregano, salt, and black pepper. Stir well to combine the flavors.

Step 4

Pour in the water or chicken stock, stirring to ensure the mixture is evenly distributed. Reduce the heat to low, cover the saucepan, and simmer for 20 minutes, stirring occasionally.

Step 5

In a small bowl, mix the cornstarch with 2 tablespoons of cold water to create a slurry. Gradually stir the slurry into the stewed tomatoes to thicken the sauce. Continue cooking uncovered for 5 minutes, or until the mixture reaches your desired consistency.

Step 6

Taste and adjust seasoning as needed. If you prefer a sweeter profile, add a pinch more brown sugar. For more tang, add an extra splash of vinegar.

Step 7

Remove from heat and garnish with fresh parsley, if desired. Serve warm as a flavorful side dish to steak, chicken, or grilled vegetables.
