Ingredients

  • 1 pound fresh green beans
  • 8 ounces shiitake mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 0.5 cup vegetable broth
  • 4 ounces goat cheese, crumbled
  • 0.75 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • 0.5 cup crispy fried shallots
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Trim the green beans and blanch them in salted boiling water for 3-4 minutes. Drain and rinse with cold water to stop the cooking, then set aside.

Step 3

In a large skillet over medium heat, melt the butter and sauté the sliced shiitake mushrooms for 5-6 minutes, until they release their moisture and begin to brown.

Step 4

Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.

Step 5

Sprinkle the flour over the mushroom mixture and stir to coat evenly, cooking for 2 minutes to eliminate the floury taste.

Step 6

Slowly add the milk and vegetable broth, whisking continuously to create a smooth sauce. Simmer for 3-4 minutes until slightly thickened.

Step 7

Stir in the goat cheese until melted and smooth. Season the sauce with salt, black pepper, and red pepper flakes. Remove from heat.

Step 8

In a large mixing bowl, combine the blanched green beans and the mushroom-cheese sauce. Toss to coat evenly.

Step 9

Transfer the mixture to a lightly greased 9x13-inch baking dish.

Step 10

In a small bowl, combine the panko breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly over the casserole.

Step 11

Top the casserole with crispy fried shallots.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and crispy.

Step 13

Remove from the oven and let rest for 5 minutes before serving.
