Ingredients

  • 15 oz Pumpkin puree
  • 12 oz Evaporated milk
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 3 large Eggs
  • 2 tsp Pumpkin pie spice
  • 0.5 tsp Salt
  • 1 box Yellow cake mix
  • 1 cup Unsalted butter
  • 1 cup Pecans, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter and set it aside.

Step 2

In a large mixing bowl, combine the pumpkin puree, evaporated milk, granulated sugar, brown sugar, eggs, pumpkin pie spice, and salt. Whisk together until smooth and well combined.

Step 3

Pour the pumpkin mixture into the prepared baking dish, spreading it out evenly.

Step 4

Sprinkle the dry yellow cake mix evenly over the top of the pumpkin mixture. Do not stir.

Step 5

Melt the unsalted butter completely. Drizzle the melted butter evenly over the cake mix, making sure to cover as much surface as possible.

Step 6

Sprinkle the chopped pecans evenly over the top of the butter and cake mix layer.

Step 7

Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and set. The cake should be slightly jiggly in the center but firm around the edges.

Step 8

Remove the cake from the oven and allow it to cool for at least 30 minutes before serving. This will help the layers set and make it easier to slice.

Step 9

Serve warm or at room temperature, optionally paired with whipped cream or a scoop of vanilla ice cream.
