  • 1 can canned whole San Marzano tomatoes (28-ounce can), crushed by hand
  • 2 tablespoons tomato paste
  • 1 cup beef stock
  • 1 bay leaf
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup Parmesan cheese, grated (optional, for serving)

Directions

Step 1

Heat the olive oil and butter in a large, heavy-bottomed pot over medium heat until the butter is melted and the mixture begins to sizzle.

Add the finely diced onion, carrot, and celery. Sauté for about 8-10 minutes, stirring occasionally, until the vegetables are softened and lightly golden.
