Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons sweet paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 2 cups beef broth
  • 2 cups uncooked elbow macaroni
  • 1 whole bay leaf
  • 0.25 cup fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes, or until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, being careful not to burn it.

Step 4

Add the ground beef to the pot. Cook while breaking it apart with a wooden spoon, until browned and fully cooked, about 7-8 minutes. Drain any excess grease if necessary.

Step 5

Stir in the sweet paprika, ground cumin, dried oregano, salt, and black pepper, allowing the spices to coat the meat evenly.

Step 6

Pour in the canned diced tomatoes, tomato sauce, and beef broth. Stir to combine.

Step 7

Add the bay leaf, then cover the pot and bring the mixture to a simmer over medium heat. Let it cook gently for 15 minutes, stirring occasionally.

Step 8

Stir in the uncooked elbow macaroni, ensuring it is fully submerged in the liquid. Replace the lid and simmer for an additional 12-15 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.

Step 9

Remove the pot from heat and discard the bay leaf.

Step 10

Let the goulash rest for 5 minutes to thicken slightly, then give it a final stir.

Step 11

Garnish with chopped fresh parsley and serve warm.
