  • 2 lb Red potatoes
  • 6 slices Bacon
  • 1 medium, diced Yellow onion

  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash the potatoes thoroughly and place them in a large pot. Cover the potatoes with water and bring to a boil over high heat. Reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 2

While the potatoes cook, heat a large skillet over medium heat. Add the bacon slices and cook until crispy, turning occasionally. Remove the bacon from the skillet and set it on a paper towel-lined plate to drain. Reserve the bacon fat in the skillet.
