Ingredients

  • 2 lbs Ground beef
  • 0.5 lbs Ground pork
  • 1.5 cups Mushrooms (cremini or white button), finely chopped
  • 1 medium Onion, finely diced
  • 3 cloves Garlic cloves, minced
  • 1 cup Breadcrumbs
  • 0.5 cup Parmesan cheese, grated
  • 2 large Eggs, beaten
  • 0.5 cup Munich Dark Harpoon Beer
  • 2 tbsp Tomato paste
  • 1.5 tsp Salt
  • 0.75 tsp Black pepper
  • 1 tsp Paprika
  • 1 tbsp Worcestershire sauce
  • 0.5 cup Ketchup (for glaze)
  • 1 tbsp Brown sugar (for glaze)
  • 1 tbsp Dijon mustard (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil.

Step 2

In a large skillet over medium heat, add a drizzle of olive oil and sauté the mushrooms, onion, and garlic until softened, about 5-7 minutes. Remove from heat and allow to cool slightly.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, sautéed vegetables, breadcrumbs, Parmesan cheese, beaten eggs, tomato paste, Munich Dark Harpoon Beer, Worcestershire sauce, salt, black pepper, and paprika. Mix until everything is evenly incorporated, but do not overmix.

Step 4

Shape the mixture into a loaf on the prepared baking sheet or press it into a loaf pan and invert it onto the baking sheet.

In a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard. Spread this glaze evenly over the top of the meatloaf.

Bake in the preheated oven for 65-75 minutes, or until an internal temperature of 160°F (71°C) is reached. If the glaze starts to brown too much, cover loosely with aluminum foil.

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.
