Ingredients

  • 500 g Chicken breast (boneless, skinless)
  • 100 g Cornstarch
  • 100 g All-purpose flour
  • 2 large Eggs
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 500 ml Cooking oil (for frying)
  • 200 g Pineapple chunks (canned, drained)
  • 2 medium Bell peppers (red, green, or yellow)
  • 1 medium White onion
  • 120 ml Ketchup
  • 100 ml Rice vinegar
  • 30 ml Soy sauce
  • 50 g Brown sugar
  • 2 cloves Garlic (minced)
  • 1 tsp Ginger (minced)
  • 60 ml Water
  • 2 tsp Cornstarch (for sauce)

Directions

Step 1

Cut the chicken breast into bite-sized cubes and season with 1/2 tsp salt and 1/4 tsp black pepper. Set aside.

Step 2

In a bowl, mix cornstarch and all-purpose flour. In another bowl, whisk the eggs.

Step 3

Coat the chicken pieces in the flour mixture, then dip them into the egg, and coat again in the flour mixture. Set aside on a plate.

Step 4

Heat the cooking oil in a large pan or deep fryer over medium-high heat. Fry the coated chicken pieces in batches until golden and crispy, about 4-5 minutes per batch. Place the cooked chicken on a paper towel-lined plate to drain excess oil.

Step 5

Dice the bell peppers and onion into medium chunks. Set aside.

Step 6

In a small bowl, combine ketchup, rice vinegar, soy sauce, brown sugar, water, and 2 tsp cornstarch. Stir until smooth. Set aside.

Heat 2 tbsp of the frying oil in a large frying pan or wok over medium heat. Add minced garlic and ginger, and sauté until fragrant, about 1 minute.

Step 8

Add the diced bell peppers and onion to the pan. Stir-fry for 3-4 minutes until slightly softened.

Step 9

Add the pineapple chunks to the pan, followed by the sweet and sour sauce mixture. Stir well and cook for 2-3 minutes until the sauce thickens.

Step 10

Add the crispy chicken pieces to the pan and toss everything together until well coated in the sauce.

Step 11

Serve hot with steamed white rice or fried rice. Enjoy!
