  • 12 oz egg noodles
  • 2 tbsp olive oil

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 3 tbsp sour cream
  • 0.5 tsp kosher salt
  • 0.25 tsp ground black pepper
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Cook the egg noodles according to package instructions. Drain and set aside, keeping them warm.

Step 2

In a large skillet or Dutch oven, heat olive oil and 1 tablespoon of the butter over medium heat.

Add the diced onion and cook for 3-4 minutes, until softened. Add the minced garlic and cook for an additional 1 minute.

Stir in the sliced mushrooms and cook for 5-6 minutes, until they release their moisture and begin to brown. Transfer the mushroom mixture to a plate and set aside.
