Ingredients

  • 1.5 cups Warm water
  • 0.25 cup Honey
  • 1 tablespoon Active dry yeast
  • 3 cups Whole wheat flour
  • 1 cup Bread flour
  • 1.5 teaspoons Salt
  • 3 tablespoons Olive oil
  • 0.25 cup Sunflower seeds
  • 0.25 cup Pumpkin seeds
  • 2 tablespoons Flaxseeds
  • 2 tablespoons Sesame seeds
  • 2 tablespoons Oats

Directions

Step 1

In a large mixing bowl, combine the warm water and honey. Stir until the honey dissolves.

Step 2

Sprinkle the active dry yeast over the top of the water mixture and let it sit for 5-10 minutes, or until frothy.

Step 3

Add the whole wheat flour, bread flour, and salt to the yeast mixture. Stir until the dough begins to come together.

Step 4

Add the olive oil and continue mixing until the dough becomes soft and slightly sticky.

Step 5

Transfer the dough to a floured surface and knead for 8-10 minutes, or until smooth and elastic.

Step 6

Gradually knead in the sunflower seeds, pumpkin seeds, flaxseeds, sesame seeds, and oats until evenly distributed throughout the dough.

Step 7

Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 8

Punch down the dough and shape it into a loaf. Place it into a greased 9x5-inch loaf pan.

Step 9

Cover the loaf pan with a towel and let the dough rise again for 30-45 minutes, or until it has risen just above the edge of the pan.

Step 10

Preheat your oven to 375°F (190°C).

Step 11

Bake the bread for 30-35 minutes, or until the top is golden brown and it sounds hollow when tapped.

Step 12

Remove the bread from the pan and allow it to cool on a wire rack before slicing.
