Ingredients

  • 2.5 cups Whole wheat flour
  • 0.5 cups All-purpose flour
  • 0.5 cups Rolled oats
  • 2 tablespoons Vital wheat gluten
  • 2.25 teaspoons Instant yeast
  • 1 teaspoon Salt
  • 1 cup Warm water
  • 3 tablespoons Maple syrup
  • 2 tablespoons Unsweetened applesauce
  • 2 tablespoons Coconut oil (melted)
  • 0.5 cup Brown sugar
  • 2 tablespoons Ground cinnamon
  • 0.25 cup Sunflower seeds (optional)
  • 0.25 cup Pumpkin seeds (optional)
  • 2 tablespoons Flaxseeds (ground or whole)
  • 1 tablespoon Chia seeds

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rolled oats, vital wheat gluten, yeast, and salt.

Step 2

In a separate bowl, mix warm water, maple syrup, applesauce, and melted coconut oil. Gradually add the wet mixture to the dry ingredients, stirring to combine.

Step 3

Knead the dough on a lightly floured surface for 8-10 minutes, until smooth and elastic. If the dough is sticky, add a little more flour as needed.

Step 4

Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free area for about 1 hour or until doubled in size.

Step 5

While the dough is rising, prepare the filling by mixing brown sugar and cinnamon in a small bowl. Add sunflower seeds, pumpkin seeds, flaxseeds, and chia seeds for extra texture if desired.

Step 6

Once the dough has risen, punch it down and roll it out into a rectangle, about 12x16 inches.

Step 7

Sprinkle the cinnamon-sugar mixture evenly over the surface of the dough, leaving a 1-inch border around the edges.

Step 8

Starting from the long side, tightly roll up the dough into a log. Pinch the seam to seal and tuck the ends under.

Step 9

Place the rolled dough seam-side down on a greased or parchment-lined baking sheet. Cover with a cloth and let it rise again for 30 minutes.

Step 10

Preheat your oven to 375°F (190°C). Bake the loaf for 35-40 minutes, or until it is golden brown and sounds hollow when tapped.

Step 11

Allow the loaf to cool on a wire rack for at least 30 minutes before slicing. Serve warm or at room temperature.
