Ingredients

  • 3 pounds Beef chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 large Yellow onion, diced
  • 4 medium Carrots, peeled and cut into chunks
  • 4 medium Russet potatoes, peeled and quartered
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Thyme, dried
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season the beef chuck roast on all sides with salt, black pepper, and garlic powder.

Step 2

In a large skillet over medium-high heat, sear the roast for about 3-4 minutes on each side until browned. This step is optional but provides extra flavor.

Step 3

Place the seared roast in the crock-pot. Add the diced onion, carrots, and potatoes around the roast.

Step 4

Pour the beef broth and Worcestershire sauce over the roast and vegetables. Sprinkle the dried thyme over the top.

Step 5

Cover the crock-pot with its lid and cook on LOW for 8 hours, or until the roast is fork-tender.

Step 6

Once the roast is done, remove it and the vegetables from the crock-pot and transfer them to a serving platter. Cover with foil to keep warm.

Step 7

To make the gravy, transfer the cooking liquid from the crock-pot into a small saucepan. Skim off any excess fat, if necessary.

Step 8

In a small bowl, whisk together the cornstarch and water to form a slurry. Gradually whisk the slurry into the saucepan with the cooking liquid over medium heat.

Step 9

Continue to cook and stir until the gravy thickens, about 3-5 minutes.

Step 10

Serve the pot roast and vegetables with the prepared gravy drizzled over the top. Enjoy!
