Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 28 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper (optional, for spice)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese (optional, for garnish)
  • 0.5 cup sour cream (optional, for garnish)
  • 0.25 cup chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onion and sauté for 3-4 minutes, until softened.

Step 3

Add the garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

Step 4

Add the diced green and red bell peppers and cook for 5 minutes, until they start to soften.

Step 5

Push the vegetables to the side of the pot and add the ground beef to the center. Use a wooden spoon to break it up into crumbles as it cooks.

Step 6

Cook the ground beef until browned, about 5-7 minutes. Drain any excess grease, if necessary.

Step 7

Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper. Let the spices cook with the beef and vegetables for 1-2 minutes to bloom their flavors.

Step 8

Add the canned diced tomatoes (with their juices), tomato paste, kidney beans, black beans, and beef broth. Stir everything together until well combined.

Step 9

Bring the chili to a simmer, then reduce the heat to low. Cover partially and let it simmer gently for 30-35 minutes, stirring occasionally to prevent sticking.

Step 10

Taste the chili and adjust the seasoning with more salt and pepper, if needed.

Step 11

Serve hot, topped with shredded cheddar cheese, sour cream, and chopped cilantro if desired. Enjoy!
