Ingredients

  • 1 lb kielbasa sausage
  • 2 tbsp olive oil
  • 1 large yellow onion
  • 1 large bell pepper (red or green)
  • 2 celery stalks
  • 3 garlic cloves
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • 14.5 oz diced tomatoes (canned)
  • 1 cup chicken broth
  • 2 cups white or brown rice (cooked)
  • 3 stalks green onions
  • 1 tbsp parsley (optional)
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Slice the kielbasa sausage into 1/4-inch thick rounds.

Step 2

Chop the yellow onion, bell pepper, and celery into small, even pieces. Mince the garlic cloves.

Step 3

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 4

Add the sliced kielbasa to the pan and cook for 4-5 minutes, turning occasionally, until browned on both sides. Remove the sausage from the pan and set aside.

Step 5

In the same pan, add the chopped onion, bell pepper, and celery. Cook for 5-6 minutes, stirring occasionally, until the vegetables are softened.

Step 6

Stir in the minced garlic, Cajun seasoning, and paprika. Cook for 1-2 minutes until the spices are fragrant.

Step 7

Add the diced tomatoes (with their juices) and chicken broth to the pan. Stir well to combine.

Step 8

Return the cooked kielbasa to the pan and stir to coat it in the sauce. Lower the heat and let the mixture simmer for 10-12 minutes, allowing the flavors to meld together.

Step 9

Taste the sauce and season with salt and black pepper as needed.

Step 10

Serve the Cajun kielbasa mixture over cooked rice and garnish with sliced green onions and chopped parsley, if desired.
