  • 2 lbs beef chuck (cut into 2-inch cubes)

  • 2 tbsp all-purpose flour
  • 2 cups beef stock
  • 2 tbsp olive oil
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • 2 tbsp fresh parsley (for garnish)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 strip orange zest (optional)

Directions

Step 1

In a large bowl, combine the beef cubes, red wine, sliced carrot, celery, onion, bay leaves, and thyme. Cover and marinate in the refrigerator for at least 4 hours or overnight for best flavor.

Remove the beef from the marinade and pat it dry with paper towels. Strain the marinade, reserving the liquid and vegetables separately.

In a large Dutch oven, heat the olive oil over medium-high heat. Working in batches, sear the beef cubes until browned on all sides. Remove and set aside.
