Ingredients

  • 2 cups Medjool dates
  • 2.5 cups Water
  • 1 teaspoon Lemon juice (optional)

Directions

Step 1

Prepare the dates by removing the pits and ensuring they are clean and free of any debris.

Step 2

In a medium-sized saucepan, combine the pitted dates and water. Bring the mixture to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to medium-low, cover the saucepan, and let it simmer for 20-25 minutes, stirring occasionally to prevent sticking. The dates should become very soft and the water will take on a dark, syrupy consistency.

Step 4

Remove the saucepan from heat and let the mixture cool slightly, about 5-10 minutes.

Step 5

Transfer the soft dates and liquid to a high-powered blender or food processor. Blend on high speed until smooth and creamy. If the mixture is too thick to blend smoothly, you can add 1-2 tablespoons of additional warm water as needed.

Step 6

Once blended, strain the mixture through a fine mesh strainer or cheesecloth into a clean bowl or jar, pressing down with a spoon or spatula to extract the thick syrup. Discard the leftover solids.

Step 7

If desired, stir in the lemon juice for a hint of acidity to balance the sweetness.

Step 8

Pour the date syrup into a sterilized jar or airtight container. Allow it to cool completely before sealing and storing in the refrigerator.

Step 9

Use within 2-3 weeks for the best flavor, and stir before using as natural separation may occur.
