Ingredients

  • 2 cups pitted dates
  • 1 cup water
  • 0.5 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 0.5 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter
  • 1 9-inch pie crust (store-bought or homemade)
  • 1 egg (beaten, for egg wash)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a medium saucepan, combine the pitted dates and water. Cook over medium heat until the dates soften, about 5 minutes.

Step 3

Add the granulated sugar, cornstarch, lemon juice, and ground cinnamon to the saucepan. Stir well and continue cooking until the mixture thickens, about 3-5 minutes. Remove from heat and stir in the unsalted butter until melted and fully incorporated. Set aside to cool slightly.

Step 4

Roll out your pie crust and fit it into a 9-inch pie pan. Trim and crimp the edges as desired.

Step 5

Pour the date filling into the prepared pie crust, spreading it out evenly.

Step 6

Roll out any remaining pie crust for a lattice topping or cut shapes to decorate the top of the pie. Lay the lattice or shapes over the filling.

Step 7

Brush the top crust or decorations with the beaten egg for a golden finish.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

Step 9

Remove the pie from the oven and allow it to cool slightly before serving. Serve warm or at room temperature. Optionally, garnish with whipped cream or a scoop of vanilla ice cream.
