Ingredients

  • 12 pieces Medjool dates
  • 1 cup Pecans
  • 0.5 cup Rolled oats
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Shredded coconut (optional, for rolling)

Directions

Step 1

Remove the pits from the Medjool dates and roughly chop each date.

Step 2

In a food processor, add the chopped dates, pecans, rolled oats, ground cinnamon, vanilla extract, and salt.

Step 3

Pulse the mixture until it forms a sticky, crumbly dough-like consistency. Occasionally scrape down the sides of the processor to ensure even mixing.

Step 4

Once the mixture holds together when pressed, scoop out about 1 tablespoon of the mixture and roll it into a small ball using your palms.

Step 5

Repeat this process until all the mixture is used up, forming approximately 12 balls.

Step 6

If desired, pour the shredded coconut onto a plate and roll each ball in the coconut to coat the outside.

Step 7

Place the balls in an airtight container and refrigerate for at least 30 minutes before serving.
