  • 3 large Egg whites
  • 0.75 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.5 cup Pitted dates, finely chopped
  • 0.5 cup Pecans or walnuts, finely chopped
  • 0.125 teaspoon Salt

Directions

Step 1

Preheat your oven to 250°F (120°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a clean, dry mixing bowl, use an electric mixer to beat the egg whites on medium speed until just foamy.

Step 3

Sprinkle in the salt and continue beating the egg whites until soft peaks form.

Step 4

Gradually add the granulated sugar, 1 tablespoon at a time, while continuing to beat. Increase the mixer speed to high and beat until stiff, glossy peaks form. The meringue should hold its shape when the beaters are lifted.
