Ingredients

  • 2 cups pitted dates
  • 0.5 cups water
  • 0.25 cups granulated sugar
  • 1 cups all-purpose flour
  • 1 cups rolled oats
  • 0.75 cups brown sugar, packed
  • 0.75 cups unsalted butter, melted
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 0.5 cups chopped walnuts

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper.

Step 2

In a small saucepan, combine the pitted dates and water. Cook over medium heat, stirring occasionally, until the dates have softened and formed a thick paste, about 5–7 minutes. Remove from heat and stir in the granulated sugar. Set aside to cool.

Step 3

In a large bowl, mix together the flour, rolled oats, brown sugar, baking soda, and salt.

Step 4

Add the melted butter to the dry ingredients and stir until the mixture becomes crumbly.

Step 5

Press half of the crumb mixture evenly into the bottom of the prepared baking pan to form the base.

Step 6

Spread the cooled date mixture evenly over the bottom crust.

Step 7

Sprinkle the chopped walnuts over the date layer.

Step 8

Top the date and walnut layer with the remaining crumb mixture, pressing gently to ensure an even layer.

Step 9

Bake in the preheated oven for 25–30 minutes, or until the top is golden brown.

Step 10

Remove from the oven and allow the bars to cool completely in the pan before slicing into squares or rectangles.

Step 11

Serve and enjoy! Store leftovers in an airtight container at room temperature for up to 5 days.
