Ingredients

  • 150 g Dried dates
  • 250 ml Water
  • 150 g Self-raising flour
  • 50 g Wholemeal flour
  • 50 g Brown sugar
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 1 large Egg
  • 120 g Plain low-fat yogurt
  • 1 tsp Vanilla extract
  • 0.5 tsp Baking soda
  • 0.25 tsp Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease or line 8 sections of a mini loaf tin with baking paper.

Step 2

Roughly chop the dried dates and place them in a small saucepan with water. Bring the mixture to a simmer over medium heat and cook for 5 minutes or until the dates have softened. Remove from heat and set aside to cool slightly.

Step 3

In a large mixing bowl, sift together the self-raising flour, wholemeal flour, brown sugar, ground cinnamon, ground nutmeg, baking soda, and salt.

Step 4

In another bowl, lightly beat the egg and mix in the plain low-fat yogurt and vanilla extract.

Step 5

Pour the cooled date mixture and the egg-yogurt mixture into the bowl with the dry ingredients. Stir gently until just combined, being careful not to overmix.

Divide the batter evenly among the prepared sections of the mini loaf tin.
