Ingredients

  • 300 grams Pitted dates
  • 240 ml Water
  • 115 grams Unsalted butter
  • 100 grams Light brown sugar
  • 2 teaspoons Vanilla extract
  • 1 Large egg
  • 190 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 60 grams Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line an 8x8-inch (20x20 cm) baking pan with parchment paper or grease it lightly with butter.

Step 2

Place the pitted dates and water in a medium saucepan over medium heat. Bring the mixture to a simmer, then reduce the heat to low and cook for about 5 minutes, stirring occasionally, until the dates are soft and most of the water is absorbed.

Step 3

Remove the saucepan from heat, and use a fork or a potato masher to mash the dates into a smooth paste. Allow the mixture to cool to room temperature.

Step 4

In a large mixing bowl, cream together the unsalted butter and light brown sugar until light and fluffy using a hand mixer or a wooden spoon.

Add the vanilla extract and egg, and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
