Ingredients

  • 250 grams Pitted dates
  • 250 ml Boiling water
  • 1 teaspoon Baking soda
  • 100 grams Unsalted butter
  • 150 grams Brown sugar
  • 1 teaspoon Vanilla extract
  • 2 Large eggs
  • 200 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 50 grams Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease or line a standard 9x5-inch loaf pan with parchment paper.

Step 2

In a medium bowl, combine the pitted dates and baking soda. Pour the boiling water over the dates and let the mixture sit for 10-15 minutes to soften the dates.

Step 3

In a large mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy. Stir in the vanilla extract.

Add the eggs one at a time, beating well after each addition.

Sift together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
