Ingredients

  • 200 grams Pitted dates
  • 240 ml Boiling water
  • 1 teaspoon Baking soda
  • 220 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 115 grams Unsalted butter
  • 120 ml Honey
  • 100 grams Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 100 grams Walnuts, chopped

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line a 9x5-inch (23x13 cm) loaf pan with parchment paper for easy removal later.

Step 2

Chop the dates into small pieces and place them in a medium heatproof bowl. Pour the boiling water over the dates, then stir in the baking soda. Let the mixture rest for 10 minutes to allow the dates to soften.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

In a large mixing bowl, use a hand mixer or stand mixer to cream the butter, honey, and brown sugar until light and fluffy, about 2-3 minutes.
