  • 240 ml Boiling water
  • 115 grams Unsalted butter
  • 150 grams Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 210 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 100 grams Chopped walnuts
  • 150 grams Mixed dried fruits (e.g., raisins, apricots, cranberries)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line a 9x5 inch loaf pan with parchment paper.

Step 2

Place the pitted dates in a medium-sized bowl. Pour the boiling water over them and let them sit for 10 minutes to soften.

Step 3

In a large mixing bowl, cream together the unsalted butter and brown sugar using a hand mixer or stand mixer until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
