  • 1 cup Water
  • 1 teaspoon Vanilla extract
  • 1 cup Unsalted butter
  • 1 cup Brown sugar (packed)
  • 2 cups All-purpose flour
  • 2 cups Rolled oats
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.

Step 2

In a medium saucepan, combine the pitted dates and water. Cook over medium heat, stirring occasionally, until the dates break down and turn into a thick paste (about 5-7 minutes). Remove from heat and stir in the vanilla extract. Set aside to cool.
