Ingredients

  • 12 pieces Medjool dates
  • 1 cup Almonds
  • 0.5 cup Rolled oats
  • 2 tablespoons Cocoa powder
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Shredded coconut (unsweetened)

Directions

Step 1

1. Remove the pits from the Medjool dates. If the dates are dry, soak them in warm water for 10 minutes, then drain well before using.

Step 2

2. In a food processor, add the almonds and pulse until they are broken down into a coarse crumb texture.

3. Add the pitted dates, rolled oats, cocoa powder, vanilla extract, and salt to the food processor. Blend until the mixture comes together into a thick and sticky dough.

4. Test the mixture by pressing a bit between your fingers. If it sticks together easily, it's ready. If it's too dry, add 1 teaspoon of water at a time and blend again, but avoid adding too much.

5. Scoop out 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture to make approximately 12 balls.

6. Place the shredded coconut on a plate and roll each date ball in the coconut until fully coated.

7. Chill the date balls in the refrigerator for at least 30 minutes to firm up before serving.
