Ingredients

  • 200 grams Medjool dates, pitted and chopped
  • 2 large Banana, ripe and mashed
  • 150 grams All-purpose flour
  • 100 grams Oats
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 3 tablespoons Maple syrup
  • 4 tablespoons Coconut oil, melted
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm x 20cm (8-inch x 8-inch) square baking pan with parchment paper.

Step 2

In a medium bowl, combine the all-purpose flour, oats, baking powder, ground cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, add the mashed bananas, chopped dates, maple syrup, melted coconut oil, and vanilla extract. Mix well until the dates are evenly distributed throughout the mixture.

Step 4

Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Step 5

Pour the batter into the prepared baking pan and spread it out evenly with a spatula.

Step 6

Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Step 7

Remove the pan from the oven and allow the squares to cool completely in the pan on a wire rack.

Step 8

Once cooled, lift the bars out of the pan using the parchment paper, and cut into 12 squares.

Serve immediately or store in an airtight container at room temperature for up to 3 days. They can also be refrigerated for a week or frozen for up to 3 months.
