  • 150 g Dried apricots
  • 250 ml Boiling water
  • 250 g All-purpose flour
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 0.5 tsp Salt
  • 125 g Unsalted butter, melted
  • 100 g Brown sugar
  • 2 Eggs, large
  • 1 tsp Vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease and line a 9x5-inch loaf pan with parchment paper.

Chop the dried dates and apricots into small pieces and place them in a medium-sized bowl.

Pour the boiling water over the chopped dates and apricots, stir, and let soak for 10 minutes. This will soften the fruits and enhance their flavor.
