Ingredients

  • 4 pieces large eggs
  • 2 tablespoons unsalted butter
  • 1 tablespoon heavy cream
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon fresh chives (optional)

Directions

Step 1

Crack the eggs into a medium-sized bowl and add the heavy cream, salt, and black pepper. Whisk vigorously for about 30 seconds until the mixture is fully combined and slightly frothy.

Step 2

Place a non-stick skillet over low to medium-low heat. Add the butter and let it melt completely, ensuring it coats the bottom of the pan.

Step 3

Once the butter is melted but not browned, pour the whisked egg mixture into the skillet.

Step 4

Allow the eggs to sit undisturbed for about 10–15 seconds, then use a silicone spatula to gently push the edges of the eggs toward the center, allowing the uncooked egg to flow to the edges.

Step 5

Continue to gently push, fold, and stir the eggs for 2–3 minutes, ensuring they cook evenly and remain soft. Adjust the heat if necessary to avoid overcooking.

Step 6

Once the eggs are mostly set but still slightly glossy, remove the skillet from the heat. The residual heat will finish cooking the eggs.

Step 7

Transfer the scrambled eggs onto plates and garnish with freshly chopped chives, if desired. Serve immediately.
