Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cloves
  • 1 cup Canned pumpkin
  • 1 cup Vegetable oil
  • 4 Eggs
  • 8 ounces Cream cheese
  • 0.5 cups Unsalted butter, softened
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x13-inch baking pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, baking soda, salt, nutmeg, and cloves until well combined.

Step 3

Add the canned pumpkin, vegetable oil, and eggs to the dry ingredients. Mix until the batter is smooth and evenly combined.

Step 4

Pour the batter into the prepared baking pan and spread it out evenly.

Step 5

Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

Remove the pan from the oven and let the pumpkin bars cool completely in the pan on a wire rack.

Step 7

While the bars are cooling, prepare the cream cheese frosting. In a medium mixing bowl, beat the cream cheese and softened butter together until smooth and creamy.

Step 8

Add the powdered sugar and vanilla extract to the cream cheese mixture and beat until smooth and fluffy.

Step 9

Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top.

Step 10

Cut the frosted pumpkin bars into 24 squares and serve. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
