Ingredients

  • 1.75 cups All-purpose flour
  • 0.75 cup Unsweetened cocoa powder
  • 2 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk (room temperature)
  • 0.5 cup Vegetable oil
  • 2 large Eggs (room temperature)
  • 2 teaspoons Pure vanilla extract
  • 1 cup Hot brewed coffee
  • 1 cup Dark chocolate chips
  • 1 cup Unsalted butter (softened)
  • 3 cups Powdered sugar
  • 0.5 cup Heavy cream
  • 4 ounces Dark chocolate (chopped for ganache)
  • 0.5 cup Heavy cream (for ganache)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk until well combined.

Step 3

In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

Step 5

Pour in the hot brewed coffee and gently stir. The batter will be thin, but this is normal.

Step 6

Fold in the dark chocolate chips for an extra burst of chocolate in each bite.

Step 7

Divide the batter evenly between the prepared cake pans and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 9

While the cakes are cooling, prepare the frosting. Beat the softened butter on medium speed until creamy, about 2 minutes.

Step 10

Gradually add the powdered sugar and cocoa powder, beating on low speed until combined. Increase the speed to medium and beat in the heavy cream until the frosting is light and fluffy.

Step 11

For the ganache, heat the chopped dark chocolate and heavy cream in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth and glossy.

Step 12

Once the cakes are fully cooled, place the first layer on a serving plate or cake stand. Spread a generous amount of frosting over the top.

Step 13

Place the second layer on top and spread frosting over the top and sides of the cake. Smooth with an offset spatula.

Step 14

Drizzle the prepared ganache over the top of the cake, letting it drip down the sides for a dramatic effect.

Step 15

Decorate the cake with additional chocolate chips, shavings, or sprinkles if desired. Slice and serve!
