Ingredients

  • 300 grams Dark chocolate (70% cocoa or higher)
  • 120 milliliters Heavy cream
  • 30 grams Unsalted butter
  • 1 teaspoon Vanilla extract
  • 50 grams Cocoa powder (unsweetened, for coating)
  • 1 pinch Sea salt flakes (optional, for garnish)

Directions

Step 1

Chop the dark chocolate into small pieces and place it in a heatproof bowl.

Step 2

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Step 3

Pour the hot cream over the chopped chocolate. Let it sit undisturbed for 2 minutes to allow the chocolate to melt.

Step 4

Add the unsalted butter and vanilla extract to the bowl. Stir the mixture gently using a spatula until it is smooth, glossy, and fully combined.

Step 5

Cover the bowl with plastic wrap and refrigerate for 2 to 3 hours or until the chocolate mixture is firm but scoopable.

Step 6

Scoop out small portions of the chilled mixture using a teaspoon or a small cookie scoop. Roll each portion into a smooth ball between your palms.

Step 7

Place the cocoa powder in a shallow bowl. Roll each truffle in the cocoa powder until fully coated.

Step 8

If desired, sprinkle a small pinch of sea salt flakes on top of each truffle for a hint of crunch and flavor contrast.

Step 9

Refrigerate the finished truffles in an airtight container until ready to serve. Allow them to come to room temperature for 10 minutes before serving for the best texture.
