Ingredients

  • 200 grams pitted dates
  • 250 ml dark cola
  • 100 grams unsalted butter
  • 125 grams brown sugar
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a standard loaf tin. Line the bottom with parchment paper for easier removal.

Place the pitted dates in a heatproof bowl. Pour the dark cola over the dates and let them soak for 10 minutes to soften.
