Ingredients

  • 200 grams dark chocolate (70% cocoa or higher)
  • 2 tablespoons unsalted butter
  • 4 pieces large eggs, separated
  • 3 tablespoons granulated sugar
  • 250 milliliters heavy cream
  • 1 teaspoon vanilla extract
  • 1 pinch pinch of salt

Directions

Step 1

Finely chop the dark chocolate and place it in a heatproof bowl.

Step 2

Add the unsalted butter to the bowl and melt the mixture over a double boiler or in short bursts in the microwave, stirring frequently until smooth. Let it cool slightly.

Step 3

In a medium bowl, whisk the egg yolks with 2 tablespoons of granulated sugar until pale and creamy. Stir the egg yolk mixture into the melted chocolate until fully combined.
