Remove the ramekins from the water bath and let them cool to room temperature. Then, refrigerate for at least 2 hours, or until fully chilled and set.
When ready to serve, sprinkle about 1 teaspoon of granulated sugar evenly over the surface of each custard.
Using a kitchen torch, caramelize the sugar by moving the flame in a circular motion until it melts and forms a golden-brown crust. Alternatively, you can place the ramekins under a broiler for 1-2 minutes, watching carefully to avoid burning.
